DESCRIPTION
  • To offer learning opportunities within which students can create a base of knowledge and an understanding of principles and concepts that represent the foundation of the science of human nutrition.

  • To provide opportunities for students to become aware of the problems, interconnections and solutions related to the major challenges facing humankind in relation to food and nutrition.

  • To facilitate the development of awareness of personal values, attitudes and beliefs about nutrition and the roles that nutrition plays in contributing healthy life styles.

COURSE REQUIREMENTS
  • 4 proctored examinations

    Examination #1 covers Chapters 1 - 4
    Examination #2 covers Chapters 5 – 8
    Examination #3 covers Chapters 9 - 12
    Examination #4 covers Chapters 13 – 17

  • A Personal Reflective Learning Journal

    Students will create a Personal Reflective Learning Journal to record some of the meaning, knowledge and skills they create through their participation in the course.

    Students will reflect upon and make connections with experiences and activities engaged in during the Course and: 1) their past, present and future personal experiences; 2) other bodies of knowledge such as politics, economics and ethics; and 3) global, national and local events.

  • Nutritional Awareness Experiences

    A section in your textbook entitled “Rate Your Plate” is found near the end of each chapter. Choose any ten (10) of the seventeen (17) “Rate Your Plate” activities from the list below to complete and interpret. These “Rate Your Plate” activities will constitute your “Nutritional Awareness Experiences” for the Course.

    Nutritional Awareness Experiences are assigned to facilitate personal exploration and clarification of many unexamined personal ideas, feelings, assumptions, projections, attitudes, beliefs, and values you have regarding food and eating behavior

  • Personal Dietary Analysis
